1. Put the noodles in pieces in a pot of boiling water and stir well with chopsticks to prevent them from sticking together.
2. Boil for 2 to 3 minutes to desired consistency, then drain quickly in a colander and rinse in cold water.
3. For the sauce, combine Soy sauce, Mirin(=sweet rice wine), and Dashi (=Japanese soup stock) in a saucepan and bring to a boil.
4. Place the noodles in a bowl, sprinkle with cooked shrimp, tomatoes and cucumbers, and garnish with Men-tsuyu and condiments such as chopped green shiso, grated ginger and myoga.
